Now I’m reading a book about Toshiyuki Shimegi.
He was a famous coffee roaster in Japan, and “was” means he had passed away.
The book wrote that he was using a low-technologic roasting machine.
The recent modern roasting machines have timers and temperature gages, so you can only set everything and push the button, then roasting will finish automatically.
He refused this process.
When I read this, it reminded me of my coffee milling machines.
I have two machines.
One is a manual mill.
The other is an electric mill, Russell Hobbs Coffee Grinder.
This grinder has no timer dial, and the user’s manual says “Put the beans in the grinding bowl and push the switch for 10 seconds”.
I first counted the ten seconds using the cooking timer, but it was so inconvenient that I hadn’t used this electric grinder for a long time.
However, the manual grinder took a long time to mill the beans, so I restarted using this electric machine again.
After using it many times, I learned when to stop switching off by watching the condition of the coffee beans in the grinding bowl.
Now I understand what the book is saying.
今、私は標公紀(しめぎ ゆきとし)さんについての本を読んでいます。
彼は日本で有名なコーヒー焙煎士でした、「でした」というのは亡くなっているという意味です。
その本には、彼が使っていた焙煎機はローテクノロジーだと書いてありました。
最近の焙煎機はタイマーや温度計がついているので、設定してボタンを押すだけで、あとは自動で焙煎が終わります。
彼はこのやり方を拒否したのです。
これを読んだとき、私のコーヒーミルを思い出しました。
私は2台持っています。
1台は手動ミルです。
もう1台は電動ミル、ラッセルホブスのコーヒーグラインダーです。
このグラインダーにはタイマーダイヤルがなく、取扱説明書には「豆をボウルに入れてスイッチを10秒間押す」と書いてあります。
最初は調理タイマーで10秒を数えていましたが、あまりにも不便だったので、この電動グラインダーは長い間使っていませんでした。
しかし、手動のグラインダーでは豆を挽くのに時間がかかったので、再び電動のグラインダーを使い始めました。
何度も使っているうちに、グラインダーボウルの中のコーヒー豆の状態を見て、いつ電源を切るべきかがわかりました。
今では、本に書いてあることがよく分かります。
